Carrot Salad

Sometimes the simplest recipes deliver the biggest benefits. This vibrant carrot salad is one of those dishes: it’s crunchy, flavorful, and loaded with nutrients that make your skin glow.

With just a handful of ingredients: carrots, tamari, rice vinegar, sesame oil, garlic, chili crunch, a green onion, and a sprinkle of everything bagel seasoning, you’ll have a refreshing side dish (or light lunch) that’s as good for your body as it is for your taste buds.

Prioritizing whole foods is essential for building nutrient dense meals, and this salad does just that! The main ingredient: carrots, are a great source of minerals and fiber. The sesame oil aids in heart health, healthy skin, and has anti-inflammatory benefits. Lastly, the garlic helps your body with detoxification and strengthens your immune system.

I love including tamari in my recipes because it adds wonderful flavor and is great for my gluten-free friends! Tamari is a soy product and provides your body with phytoestrogen, helping to balance your natural estrogen levels. However, soy beans are one of the largest genetically modified crops so it’s best to buy organic tamari when possible 🙂

Carrot Salad

Ingredients

2 carrots

2 tsp tamari

1 tsp sesame oil

2 tsp rice vinegar

1 tsp honey

1/2 tsp chili crunch oil

1/2 tsp garlic

1 green onion

Everything but the bagel seasoning

Directions

1. Ribbon the carrots using a vegetable peeler.

2. Mix the tamari, sesame oil, rice vinegar, honey, chili crunch oil, and garlic. I typically don’t measure here, so do what you’re heart desires!

3. Garnish with everything but the bagel seasoning and chopped green onion.

4. That’s it! Enjoy!
